Summer time snacks for the kids

Hello and thanks for all the notes and cards. I am back…for the time being. Hope that you enjoyed notes from some of my grandchildren. Since school is out, I thought that I would include some quick snacks that even some of the children can make. Hope that you find something that you enjoy.  Fresh Vegetable Dip:

Mix together 16 ounces sour cream and 1 package (dry mix) Italian salad dressing mix and store in the refrigerator till ready to serve with assorted fresh vegetables.

Mini Pizzas

1 10 count can of biscuits

1 pound lean ground beef, browned and drained

1 14 ounce jar pizza quick sauce

4 ounces shredded Mozzarella cheese

Roll each biscuit into a 4 inch circle and place on a greased baking sheet and make a rim around the edge of each biscuit. Spoon sauce on biscuits and top with beef. Sprinkle with cheese and bake in a 425 degree pre-heated oven for 10 to 15 minutes or until crust is brown.

Ham – Pineapple Spears

20 spears fresh pineapple

Wafer thin slices of deli smoked ham

Wrap each pineapple spear with the deli ham and place on a platter that has a layer of salad greens on it. Place the dip in the center of the platter and serve. For dip: In a small bowl, whisk together 1 cup sour cream; 3 T lime juice; 3 T honey; and ½ tsp nutmeg.

Mexican Salad

In a very large serving bowl toss the following:

1 head lettuce shredded

4 tomatoes quartered and sliced

1 large cucumber, quartered lengthwise, deseeded and sliced

1 onion chopped

½ bell pepper, chopped

Cover and refrigerate until ready to complete. Just before serving time brown and drain 1 pound ground beef. At serving time add the following to the salad and toss.

1 package Doritos Nacho Cheese flavored chips

1 8 ounce package grated cheddar cheese

1 can kidney beans, drained

Cooked ground beef

Serve with Russian dressing and more chips. Serve immediately.

 Oatmeal Fudge Candy

3 cups minute oatmeal

6 T cocoa

1 cup chopped nuts

1 can coconut

1 tsp vanilla

2 cups sugar

1 stick butter or margarine

½ cup milk

Combine oatmeal, cocoa, nuts, and coconut in a large mixing bowl and set aside. In a large saucepan mix sugar, cocoa, butter and milk and bring to a boil and boil for 2 minutes. Stir in vanilla. Pour over mixture that is in the mixing bowl and stir to mix thoroughly. Drop by spoonful’s onto wax paper. You can press into a buttered pan and cut into small squares.

 Chocolate Covered Peanuts:

Melt 12 ounce package of chocolate chips in microwave and stir in 2 cups dry roasted peanuts. Drop on wax paper or greased pan. Cool.

 White Trash

1 pound white chocolate

2 cups pretzel sticks (small)

1 (6 ½ ounce) can salted peanuts

Make sure that pretzels are in about one inch pieces and mix with peanuts in a medium size mixing bowl. Melt chocolate in a double boiler or in the microwave. Stir in melted chocolate. Spread on a wax paper lined baking pan (large one) in a very thin layer. When cool, break into pieces.

Peanut Butter and Rice Krispy Squares

( 9x 13 pan, greased) Bring 1 (16 ounce) bottle white Karo

and 1/3 cup white sugar to boil and stir till sugar has dissolved. Stir in 1 (18 ounce) peanut butter

Mix well and stir in 1 (13 ounce) box Rice Krispies. Spread into pan and cut into 24 squares.

Rice Krispy Marshmallow Treats:

Melt ¼ cup (½ stick) butter or margarine and 1 (10 ounce) package miniature Marshmallows (about 40 large Marshmallows) (Use double boiler or 2 quart dish in microwave).Pour over 6 cups Rice Krispies and use a greased spoon and mix well. Spread in a 9 x 13 greased pan and gently press down. Cool and cut into 24 squares.

Nut Crunch:

Line a 11 x 15 pan (with sides) with foil and spray with Pam. Line pan completely with graham crackers and set aside. Bring the following to a boil: 1 stick butter, ½ cup sugar, and 1 teaspoon Vanilla. Boil for 1 minute. Stir in 2 cups chopped pecans. Spread over the graham crackers, making sure all crackers are covered. Bake at 400 degrees for 8 minutes. Let cool and break into pieces.

 Cornflake Candy:

Mix 1 cup each of white Karo, sugar, and peanut butter in a heavy boiler and bring to a full boil, stirring constantly. Remove from heat and mix with 6 cups cornflakes. Gently press into a greased pan and cut into squares or drop by spoonfuls onto wax paper or a greased pan.

Haystacks:

Melt 1 (12 ounce) package butterscotch morsels in the microwave, stir in 2 cups chow mien noodles and1 cup dry roasted peanuts. Mix well and drop by spoonfuls on wax paper to cool.

Butterscotch Krispies

2 – 6 ounce package butterscotch drops

1 cup peanut butter

6 cups Rice Krispies

Melt chips and peanut in microwave. Stir. Put Rice Krispies in a large bowl and pour peanut butter and butterscotch mixture over. Mix well and spread in a greased 9 x 13 pan. Press down and chill for one hour. Cut into square
