A variety of cornbread recipes
Well some of you are happy and some sad…SCHOOL HAS STARTED and it won’t be long before Christmas. Seems like just yesterday and it was cold and we were wishing for a white Christmas. I received a request from a young lady for some different cornbread recipes. Hope that you enjoy what I am including…take care and I’ll be seeing you around…Agnes.
Corn Bread
(Aunt Maggie’s way)
2 cups self-rising corn meal (White Lily)
2 eggs, slightly beaten with 1 cup buttermilk
4 tablespoons melted shortening
Put shortening in a cast iron frying pan and heat. Mix all other ingredients together and pour the hot shortening into batter and stir to mix. Add more milk, if needed. Pour batter into the hot pan and bake in 425 degree oven for 25 minutes or until golden brown.
Aunt Maggie made this recipe but reduced the amount of milk so that she would have a batter that would hold its shape when dropped. She would heat about 3 inches of fat till hot and drop the batter in the shape of little patties and fry, turning only once. They were delicious. Sometimes she would sprinkle with powdered sugar or put a little bowl of honey for dipping.
Plain Cornbread
2 ½ cups self-rising cornmeal mix
2 eggs, beaten
1 ½ to 2 cups buttermilk
1/3 cup shortening, melted in an iron skillet. (Can use bacon drippings or butter.)
Mix all together, except fat, with a wire whisk and pour into the hot skillet with the fat in it. Bake in preheated, 375 degree oven until golden brown.
For Mexican Cornbread: Decrease milk to 1 cup and add ½ cup finely chopped onion. 2 to 3 hot peppers (deseeded and minced), ½ cup sour cream, 1 small can whole kernel corn, and 1 cup shredded Cheddar. Pour into hot skillet and bake until golden. Delicious with Chili or vegetables.
Sweet Cornbread
(Not my favorite)
Ingredients
1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
Preheat oven to 400 degrees F. Spray or lightly grease a 9 inch round cake pan. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and vegetable oil until well combined. Pour batter into prepared pan. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Butter Nut Cake
(This is an old South Georgia cake recipe and has an unusual taste. It is better if prepared the day prior to serving. I think that there is a more modern version that uses a cake mix, but this one is the real McCoy.)
1 cup Crisco, margarine, or butter at room temperature
2 cups sugar
5 eggs
2 ½ cups plain flour
½ cup self-rising flour
1 cup sweet milk
1T butter nut flavoring
4 greased and floured cake pans
Preheat oven to 350 degrees
Cream sugar and shortening. Beat in eggs…one at the time. Beat well after each addition. Add flour, milk, and flavoring alternately. Bake in prepared pans for 20 – 25 minutes. Cool completely and ice with the following:
Icing
1 stick soft margarine
1 8oz package of cream cheese
1 box 10 x sugar
1 T butter nut flavoring
Mix well and stir in
1 small can angel flake coconut
2 cups chopped pecans
Spread between layers, on top and sides of cake.
Recipe for Laughter

•Outside a secondhand shop: We exchange anything – bicycles, washing machines, etc. Why not bring your wife along and get a wonderful bargain?
•Notice in health food shop window: Closed due to illness.
•Spotted in a safari park 🙁 I sure hope so) Elephants, please stay in your car.
•Seen during a conference: For anyone who has children and doesn’t know it, there is a day car on the first floor.
•Farmer’s field: The farmer allows walkers to cross the field for free, but the bull charges. .
•On a repair shop door: We can repair anything. (Please knock hard on the door – the bell doesn’t work)
