Summer time recipe requests

I am in awe of the number of request for certain summer (warm weather … as one reader put it) recipes. I’ll be seeing you around … Agnes. Here are some of the requests, so enjoy:

Homemade Ice Cream:

Vanilla Ice Cream

2 and ½ quarts of half and half

2 cans sweetened condensed milk

Vanilla to taste

Mix all together in a gallon ice cream freezer and churn until frozen. If necessary, add regular milk to the fill line.

Pineapple Orange Sherbet

1 bottle orange soda (2 liter size)

1 can sweetened condensed milk

1 medium can crushed pineapple, drained

Mix all together, put in gallon churn, and freeze.

Soft Custard Ice Cream

3 tablespoons gelatin, softened in ¾ cup water

Heat 6 cups milk to scalding, add gelatin mixture and 2 cans of sweetened condensed milk. Stir in vanilla to taste and ½ teaspoon salt. Chill and stir in 4 cups cream or half and half. Freeze in a 6 quart freezer.

NOTE: To make Chocolate Soft Custard Ice Cream:

Substitute chocolate milk for the 6 cups of milk and add 1 cup dry powdered chocolate drink mix, such as Nestle Quik.

Ice Cream Lasagna Dessert

15 ice cream sandwiches

½ gallon vanilla ice cream

8 ounces Cool Whip

1 jar caramel ice cream sauce

½ cup toasted, chopped pecans

2 large Heath Bars, crushed

Layer half the sandwiches in a 9×13 glass dish. Mix the ice cream with the Cool Whip and layer half over the sandwiches. Cover the ice cream mixture with the ice cream sauce and then the chopped nuts. Top with the remaining sandwiches, the remaining ice cream mixture and the heath bars. Cover and freeze. Remove from freezer about 10 minutes before serving.

Green Beans and Tomatoes (Serves 10)

2 pounds fresh green beans

2 tablespoons butter

½ cup chopped sweet onion

2 cups chopped tomatoes (fresh or canned)

½ teaspoon dried tarragon

Salt and Pepper to taste

Pinch of sugar (if desired)

Trim beans and cut in 2 inch lengths. Cook in the least possible amount of water, until tender crisp. Drain. Spread in a shallow, 2 quart, buttered baking dish. In a pan melt butter and sauté onion over low heat for about 3 minutes. Stir in remaining ingredients and cook for 10 minutes. Spoon over the beans and bake uncovered at 375 degrees until bubbly (about 15 minutes).

Sangria Ice Tea

5 cups cold water

1 cup frozen orange juice

1 tub Crystal Light Peach Flavor Ice Tea Mix

2 peaches sliced

1 cup raspberries

1cup blueberries

In a large pitcher put water, juice and tea mix. Stir until dissolved. Stir in fruit and serve over ice.

Zucchini Patties (From Crestview Mennonite Church cookbook)

1 and ½ cups grated, unpeeled zucchini

2 tablespoons chopped onion

¼ cup Parmesan cheese

¼ cup flour

2 eggs

2 tablespoons mayonnaise

¼ teaspoon oregano

Salt and pepper to taste

Press zucchini between paper towels until dry. Melt butter in skillet; spoon batter by 2 heaping tablespoons onto skillet. Flatten and fry until browned on both sides. Serve plain or top with tomato sauce and grated cheese or sour cream. (Note: This is delicious…I used olive oil instead of butter and immediately sprinkled the top with grated cheese and served warm spaghetti sauce.

BEATLES OR STONES? I still like to rock, still like to cruise in my Camaro on Saturday nights and still like to play the guitar. If you were a groovy chick, or are now a groovy hen, let’s get together and listen to my eight-track tapes.

MEMORIES: I can usually remember Monday through Thursday. If you can remember Friday, Saturday and Sunday, let’s put our two heads together.

MINT CONDITION: Male, 1932 model, high mileage, good condition, some hair, many new parts including hip, knee, cornea, valves. Isn’t in running condition, but walks well. (This is my favorite.)
