Good morning; Hope today finds everyone healthy, happy and full of good spirits. Take care and I’ll be seeing you around…Agnes. Here are some oldies and some new ones. Hope you enjoy;

KOOL-ADE Pie

The day before bake a regular pie crust and mix the following;

1 can sweetened condensed milk

1 regular size package strawberry KOOL-ADE

1 8 ounce package Mix well with a mixer until lite and fluffy. Fold in 1/2 cup each of blueberries and chopped strawberries.

Pour into baked crust, cover and refrigerate until ready to serve.

Chicken and Rice

Preheat oven to 350 degrees, place 1/2 stick butter in casserole and melt in over.

Cover bottom of dish with chicken thighs and pour 1 and 1/2 cups dry white rice.

Mix the following and pour over chicken.

1 can cream of chicken soup

1 can cream of mushroom soup

1 tablespoon Lipton onion soup (dry mix)

2 and 1/2 soup cans water

Bake uncovered for 30 minutes, cover with foil and bake another 30 minutes.

Cucumber, Avocado, and Apple Salad from the Raw Food Diet

2 large Hass Avocados- peel and dice one

3 cups seeded and diced cucumbers

2 medium green apples sliced thin

2 1/2 tablespoons fresh minced basil

2 tablespoons lime juice

1 tablespoon cider vinegar

1 tablespoon honey

2 tablespoons olive oil

Sea salt and freshly ground black pepper

Place everything (except the remaining avocado) and toss, being careful

not to break down the diced avocado. Mold salad with a biscuit cutter or

hamburger press, place on plate and top with slices of the remaining

avocado.

Miz Susie’s Pound Cake

(This recipe came to me many years ago from Mis Susie Watson of the Bonaire/Kathleen area. She was the PostMaster at Bonaire many years ago. I have fond memories of her bring this can to my husband. Hope you enjoy…agnes

2 sticks butter

5 eggs

1 3/4 cup sugar

2 cups plain flour

1 teaspoon lemon or vanilla extract Have butter and eggs at room temperature. Cream butter and sugar until; lite and fluffy.

Add 2 eggs and half the flour and beat well. Add 2 more eggs and remaining flour and beat well. Add the remaining egg and flavoring and beat just to mix…do not over beat.

Pour into well greased and floured tube pan. Bake at 350 degrees for one hour.
