Quick energy snacks for all
This the time of year when we really start to think about ‘quick energy snacks’ that will not only work well for adults but for the kids also. Here are a few recipes that my family enjoys. Take care and I’ll be seeing you around…Agnes
Peach Smoothie
2 cups chopped peaches
1 tablespoon lemon juice
2 tablespoons sugar
2 cups vanilla yogurt
1 cup (packed) crushed ice
½ cup dry nonfat powered milk
½ teaspoon vanilla flavoring
Toss peaches with sugar and lemon juice and place in freezer for 30 minutes. Place all ingredients, in the order listed, in blender and process until smooth. Serve at once. Makes about 6 cups.
Boiled Cookies
1/3 cup cocoa
2 cups sugar
Put in a heavy sauce pan and whisk together and add:
½ cup sweet milk
¼ cup butter
Bring to a boil, stirring constantly, reduce to simmer and cook for 2 minutes. Remove from heat and stir in…in the order given…mixing well after each:
½ cup peanut butter
3 cups quick (not instant) oatmeal
2 teaspoons vanilla
Drop by spoonsful onto waxed paper. Chill and eat.
Delightful Peanut Squares
1 cup sugar
1/3 cup evaporated milk
1 stick butter
Put in saucepan, bring to a boil over medium heat, stirring constantly, and boil for 6 minutes. Remove from heat and add:
10 large marshmallows, stirring until melted. Add:
1 cup graham cracker crumbs and 1 cup chopped parched peanuts. Stir to mix well. Pour into buttered pan, cool, and cut into small squares.
Chocolate Goodie Bars
In a large, heavy saucepan combine 4 ½ cups sugar, 1 can (14 ½ ounce size), and 2 sticks butter. Bring to a boil and cook over medium heat until it reaches the soft ball stage. Stir in: 1 teaspoon vanilla
1 package (10 ½ ounces) tiny marshmallows and
1 package semi-sweet chocolate chips (12 ounces) Stir until melted and stir in:
1 cup finely chopped nuts
1 ½ cup rice cereal and pour in a buttered 15 x 10 inch pan. Cool and cut into squares. To store, wrap each in wax paper and put in air tight container.
Farmers Peanut Candy
Bring to a boil: 1 cup white Karo syrup and 1 cup white sugar. Cook, stirring until sugar dissolves and stir in 1 (12 ounce) jar creamy peanut butter. Gently mix in:
4 cups corn flakes
2 cups rice cereal
1 can coconut
Mix well and drop on wax paper or press into a buttered pan and cut into bars. To store: Wrap each piece in wax paper and store in an air tight container.
Gator Aid Substitute
1 gallon tea
¾ to 1 cup sugar
2 teaspoons salt
2 teaspoons baking soda
½ to 1 cup lemon or lime juice
Dissolve sugar in hot tea. Add cold water or ice and stir in remaining ingredients. Serve cold. Good, when you are working or playing outside.
Recipe for Laughter: A little history on Hellmann’s Mayonnaise
Most people don’t know that back in 1912, Hellmann’s mayonnaise was manufactured in England. In fact, the Titanic was carrying 12,000
jars of the condiment scheduled for delivery in Havana, Cuba, which was to be the next port of call for the great ship after its stop in New York.
This would have been the largest single shipment of mayonnaise ever delivered to Cuba. But as we know, the great ship did not make it to New York. The ship hit an iceberg and sank, and the cargo was forever lost.
The people of Cuba, who were crazy about mayonnaise and were eagerly awaiting its delivery, were disconsolate at the loss. Their anguish was so great, that they declared a National Day of Mourning, which they still observe to this day. The National Day of Mourning occurs each year on May 5th and is known, of course, as Sinko de Mayo. WHAT?? You expected something educational? (From an EMAIL buddy…Agnes)
