I was contacted by a gentleman that wanted some old recipes. So after searching through notes and old cook books, I found them. Thanks for the request and I hope that all of you find something to satisfy your taste buds. I’ll be seeing you around…Agnes

Mama’s Coconut Pie

(Makes its’ own crust.)

1 ½ cup sugar

½ cup self-rising flour

¼ cup melted butter or margarine

4 eggs

2 cups milk

1 teaspoon vanilla

1 can (6 or 7 ounces) angel flake coconut

In a bowl mix sugar and flour. Add margarine or butter, eggs, milk, vanilla and mix well. Stir in coconut and mix well. Spoon into a greased 10 inch pie plate. Bake at 350 degrees until firm and light brown.

Buttermilk Pie

Ingredients

3 eggs

1 cup sugar

1/2 cup melted butter

2 tablespoons plain flour (all purpose)

1 teaspoon of vanilla

2 cups buttermilk

A pinch of nutmeg

A 9 inch pie pastry

Directions: Heat oven to 425 degrees and bake pie shell for 4 minutes-remove pie shell from oven. Decrease oven to 350 degrees. Beat eggs and sugar together until thick while beating-add melted butter, flour, vanilla, buttermilk, and nutmeg. Pour mixture into pie shell, being careful not to over fill. Bake at 350 for 30 to 40 minutes-or till pie is done. After baking allow pie to chill in frig before serving. If you’re looking for an easy quick pie to make-that’s really good-this is the one.

Salted Honey Pie by: Iron Oak Farm

Makes one 9 inch pie

Filling: Preheat oven to 350 degrees

1/2 cup melted butter

3/4 cup sugar

2 tablespoon white cornmeal

1/4 teaspoon salt

3/4 c. honey

3 eggs

1/2 cup heavy cream

2 teaspoon white vinegar

1 teaspoon vanilla extract

1-2 tablespoon flake non-iodized salt

Mix butter, sugar, salt and cornmeal to make a thick paste.

Add the honey, vanilla and vinegar and mix until well incorporated. Fold in eggs, add the cream and mix well.  Pour the filling into the pre-baked frozen shell and bake 45-60 minutes. Cover the rim of your crust with foil so the edge doesn’t burn. The filling will puff up and the center will be a bit wiggly. Allow to cool completely. Top with sea salt.

Sweet and Saltines

(Sometimes called “crack,” ‘cause they’re totally addictive.)

Cooking spray

35 to 40 saltine crackers

2 sticks (1 cup) butter

1 cup light brown sugar

8 ounces semisweet chocolate chips (about 1 1/3 cups)

Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer. In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the jelly-roll pan into the oven and bake for 3 to 5 minutes, or until just bubbly, watching carefully. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. Transfer the pan to the freezer for 15 to 20 minutes, or until completely cold. They will form one big sheet. Break up into pieces. Store in an airtight container.

Old Southern Stack Pie

4 or 5 (9 inch) pie shells

10 egg yolks

3 c sugar

1 1/2 c. melted butter

1 c. whipping cream

Line 4 or 5 (9 inch) pie pans with pastry. The one that is to be the bottom one is made regular depth. The others can be made a little thinner. Set aside. Beat egg yolks until light. Cream in sugar, beat again until light. Beat in butter and cream. Pour in pie shells, a little extra in bottom pie. Bake in 350 degree oven until filling is firm. Let cool in pan. Stack one on top of the other. Ice with following Caramel Icing. Serve by cutting wedges clear through. 4 or 5 stacks. Cook together to soft boil stage: 2 cups brown sugar, 1 cup whipping cream and a pinch of salt. Remove from heat. Beat by hand until creamy. If gets too hard before you get it all on, beat in a little cream

(This can also be done with egg custard pies and chocolate icing.)
