Labor Day recipes, good anytime
Sorry I did not get these recipes to you prior to Labor Day. However, they are good anytime and freeze well. Give them a try. Over the years, they have been successful for me. Take care and I’ll be seeing you around…Agnes
Brunswick Stew:
Cook pork and chicken separately. Remove from broth, cool, and remove bones and fat. De-fat broth. Measure chicken broth and add soup base and add enough pork broth to make 1 gallon (2 Quarts) (1 Quart ). Bring to a boil and add onions. Simmer uncovered for 1 hour. Add tomatoes, bring to a boil and cook on simmer for 30 minutes. Add corn, chicken, pork and all other ingredients except butter or margarine, peas, and salt. Slowly bring to a boil (Stirring and stirring and stirring), quickly reduce to simmer and cook for 1 hour. Make sure that you keep the heat low and stir. If it needs to be thicken, stir in some instant potatoes…just enough to thicken. When cooking is completed, remove from heat and stir in margarine or butter and peas. Taste and add salt to taste. Delicious with crackers or corn bread and slaw. It the South it is usually served with BBQ. Left overs should be canned or frozen immediately.
Texas Barbeque Brisket:
1-10 pound brisket, trimmed and rubbed generously with salt mixture ( ½ tablespoon of each; garlic salt, onion salt, and celery.) Place a sheet of foil that is large enough to cover brisket and fold over in a pan with a side to it. Put brisket on foil. Mix the following and pour over the salted brisket: ½ cup each of liquid smoke and Worcestershire sauce. Thinly slice 1 orange and lay slices over meat. Cover meat with foil and bake at 250 degrees for 5 hours. Open foil and pour 1 cup of BBQ sauce over meat and put foil loosely back over. Return to oven and bake for 2 hours. Remove foil from top and bake for 30 minutes more. Let meat rest before trying to slice.
Pulled BBQ Pork:
1-5 pound boneless pork butt rubbed with the following mixture:
¼ cup brown sugar
2 T paprika
2 T salt
2 T black pepper
1 tsp onion powder
1 tsp garlic powder
Wash pork with cold water and pat dry. Rub the spice mixture all over the meat. Put enough cooking oil in the bottom of a heavy Dutch oven to cover the bottom. Heat and brown the meat on all sides. Cover tightly and place in a preheated 300 degrees oven. Roast for 4 hours. Remove from the oven and set aside until cool enough to handle. Shred with 2 forks. Discard any gristle and fat. Chop any large pieces and serve with your favorite BBQ sauce, Cornbread and Slaw.
Something to Think About: Attitude
There once was a woman who woke up one morning, looked in the mirror, and noticed she had only three hairs on her head. “Well,” she said, “I think I’ll braid my hair today.”? So she did and she had a wonderful day.
The next day she woke up, looked in the mirror and saw that she had only two hairs on her head. “H-M-M,” she said, “I think I’ll part my hair down the middle today.” So she did and she had a grand day.
The next day she woke up, looked in the mirror and noticed that she had only one hair on her head. “Well,” she said, “Today I’m going to wear my hair in a ponytail.” So she did and she had a fun, fun day.
The next day she woke up, looked in the mirror and noticed that there wasn’t a single hair on her head. “YEAH!” she exclaimed, “I don’t have to fix my hair today!”
Attitude is everything. As the saying goes: “The kind of life you will have isn’t determined by what happens to you, it’s determined by your reaction to what happens to you.”
