Well we are over a week into the New Year and everything is traveling at such a fast pace that before we can think about it we will be in 2020. For those with a Gluten and Dairy problem…Agnes

Flourless Peanut Butter Cookies

1 cup natural peanut butter

 1 cup sugar

 1 teaspoon pure vanilla extract

 1 large egg, lightly beaten

 Coarse sea salt, for sprinkling

Preheat oven to 350 degrees and place in the upper and lower third of the oven. In a medium bowl, mix the peanut butter, sugar, vanilla, and egg until all is well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a cross hatch pattern on the cookies. Sprinkle coarse salt on top of the cookies. Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

Bob’s Red Mill Easy Gluten Free Banana Bread

(I prefer Bob’s Red Mill products to King Arthur products.)

1⁄3 cup canola oil

2⁄3 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 3⁄4 cups all-purpose gluten-free flour

2 teaspoons baking powder

1 1⁄4 teaspoons cinnamon

1 teaspoon xanthan gum

1⁄2 teaspoon salt

1 1⁄2 cups mashed ripe bananas

1⁄2 cup chopped pecans or 1⁄2 cup walnuts and 1⁄2 cup raisins

Preheat oven to 350.Grease 9×5-inch non-stick loaf pan. For smaller loaves, use three 5×3 inch loaf pans. Cream together oil, sugar, eggs, and vanilla in large bowl. Add flour, xanthan gum, salt, baking powder and cinnamon to egg mixture, alternating with bananas. Beat until smooth. Stir in nuts and raisins. Batter will be somewhat soft. Transfer to pan(s). Bake 9×5” loaf for 1 hour, 5×3” loaves for 45 minutes.

Macaroons

2 egg whites

1 cup powdered sugar

½ teaspoon almond flavoring

1 cup coconut

1 cup finely chopped almonds or walnuts

Beat egg whites until stiff and dry. Gradually fold in sugar. Add flavoring coconut and nuts. Drop by teaspoons onto a well-greased baking sheet. Bake at 350 degrees at approximately 10 minutes.

Potato Dumplings

1 quart water (If making chicken and dumplings substitute chicken broth)

1 teaspoon salt unless using bouillon,

5 cups mashed Potatoes

1 ½ cups gluten free flour

2 slightly beaten eggs

1 teaspoon baking powder substitute

Good pinch of baking soda

Mix potatoes, flour, eggs, baking powder or substitute and soda. Mix until mixture is fluffy. Roll into 1 inch ball and use the tines of a fork to gently mark the dumplings with ridges. Bring water and salt to a gentle boil. Drop dumplings in the boiling liquid and cook for seven minutes. Remove from liquid and serve warm with roast beef and gravy. If making chicken and dumplings, in a measuring cup put ½ cup each of minced carrots and celery along with cooking broth to just cover and cook in microwave for 1 minute. Add to remaining broth and cook dumplings. Add 2 cups cooked, bite size chopped chicken. Stir and heat to simmer and turn off heat. Let sit for 5 minutes and serve.

Warm German Potato Salad

6 slices of thick bacon cut in ½ inch pieces

1 cup chopped onion3/4 cup good vinegar

1 tablespoon sugar

½ teaspoon salt1/4 teaspoon black pepper

5 to 6 cups cooked, sliced potatoes

½ tablespoon parsley (dried or fresh)

Fry bacon and remove to drain. Reserve ¼ cup of the drippings. Put the potatoes, onions, and parsley in a bowl and pour half the vinegar over them. Toss to coat all. Add the remaining ingredients, except bacon and vegetables and gently being to a boil. Stir and pour over vegetables. Gently toss making sure all is coated. Sprinkle bacon on top and serve.

Recipe for Laughter:

A group of 12 women were at a seminar on how to live in a loving relationship with their husbands. The women were asked, “How many of you love your husband?” All the women raised their hand. Then they were asked, “When was the last time you told your husband you loved him?” Some women answered today, a few yesterday, and some couldn’t remember.  The women were then told to take out their cell phones and text their husband “I love you, sweetheart.” Next the women were instructed to exchange phones with another woman and read aloud the text message they received in response to their message. Below are 12 actual replies from their husbands. If you have been married for quite a while, you understand that these replies are a sign of true love. Who else would reply in such a succinct and honest way? 

1. Who the heck is this?

2. Hey, mother of my children, are you sick or what?

3. Yeah and I love you too. What’s wrong?

4. What now? Did you wreck the car again?

5. I don’t understand what you mean.

6. What the heck did you do now?

7. Are you sure this is for me?

8. Don’t beat around the bush; just tell me how much you need?

9. Am I dreaming?

10. If you don’t tell me who this message is actually for, someone will die.

11. I thought we agreed you wouldn’t drink during the day.

12. Your mother is coming to stay with us, isn’t she?
