Recently, I was asked for some tasty chicken recipes that served with bread and salad would make a complete meal. Here are some that I use often. Enjoy and I’ll be seeing you around…Agnes

Stewed Chicken: Salt and pepper 1 cut up fryer. Roll in self-rising flour and quickly brown in a small amount of fat. Place browned chicken on a warm dish, cover and set aside. Make gravy in the pan where chicken was browned. Mix gravy with 1 can cream of mushroom soup and liquid from 1 can of sliced mushrooms. Put chicken down in the gravy and place one sliced large sweet onion over the chicken and 1 large can sliced mushrooms. Spoon some of the gravy over the chicken, onion and mushrooms. Cover and bake in 375 degree oven until chicken is done, about 45 minutes. Serve with cooked rice, pasta or creamed potatoes.

Chicken Spaghetti (From my daughter-in-law, Pat Farr)

1 lb. spaghetti, uncooked

½ medium bell pepper, minced

½ cup sweet onion, minced

½ cup celery, minced

4 large chicken breast halves cooked in chicken broth, and cut into bite-size pieces, discarding bone and skin. (Save broth to cook spaghetti in.)

1 lb. (12 oz.) Velveeta, cut into 1/2-inch cubes

1 can (10 oz.) Rotel diced tomatoes and green chilies, undrained

1 cup shredded Cheddar cheese

Preheat oven to 350ºF. Spray a 9×13 inch baking dish with cooking spray and set aside. In the pot that you are going to cook the spaghetti, put 1 tablespoon of butter or olive oil and add the minced vegetables. Cook over low heat until almost tender. Add the chicken broth and bring to a boil. Add spaghetti to chicken broth (omitting salt) and cook as you would for regular spaghetti, drain most of the broth from spaghetti (making sure to keep all vegetables and spaghetti in pot) and stir in Velveeta. Stir until melted. Stir in Rotel and chicken adding a little more broth if needed. Pour into baking dish, shredded cheese on top and place in oven until heated completely, about 25 to 30 minutes. Serves 8 to 10.

Chicken Chili

1 and 1/2 pounds boneless skinless chicken breasts, cubed

1 medium onion, chopped

½ cup minced celery

1 tablespoon olive oil

¼ teaspoon garlic powder

2 teaspoons ground cumin

2 teaspoons dried oregano

1-1/2 teaspoons cayenne pepper

1 quart chicken broth

1 can (4 ounces) chopped green chilies

4 cans (14-1/2 ounces) great northern beans wash under running water and drain

1 cup (4 ounces) shredded Monterey Jack cheese

Minced jalapeno pepper, optional

In a heavy pot over medium heat, oil and add chicken, celery and onion. Cook until color begins to change (don’t brown). Add garlic and stir in the broth, chilies, cumin, oregano and cayenne; bring to a boil. Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until chicken is no longer pink and vegetables are tender. Top each serving with cheese and jalapeno pepper if desired. Makes about 3 quarts. Serve with cornbread or corn chips.

Angel Biscuits

5 cups self-rising flour

1 cup vegetable shortening (I use Crisco)

2 packages dry yeast

½ cup sugar

1 and ½ cup buttermilk (more or less)

Whisk together flour, yeast and sugar. Cut in shortening until it is like small crumbs and add enough buttermilk to make a good dough. It should pull away from sides of bowl. Turn on a floured surface and gently knead. Roll out to about ¾ inch thickness. Cut with a biscuit cutter and place on a buttered baking pan. Bake in a preheated 400 degree oven until golden brown (about 12-15 minutes). Store remaining dough in an airtight container in refrigerator for up to three weeks.

Recipe for Laughter and Something to Ponder:

•Why is it that after I push one for English, I still can’t understand the person on the other end?

•Never ask Google for medical advice. I have gone from mild headache to clinically dead in three clicks.

•Ice cream is clearly God’s way of saying he likes us a little bit chubby.

•Sometimes the thoughts in my head get bored and go for a stroll out through my mouth. This is never a good thing.

•Life is too short to be serious all the time. So, if you can’t laugh at yourself, just call me and I’ll laugh at you.

•I do not have gray hair! These are wisdom highlight! I just happen to be extremely WISE!

•Well, I’ve finally reached my wonder years: Wonder where my car is parked?; Wonder where I left my phone?; Wonder where my sunglasses are?; and Wonder what day it is? …Have a great day…Agnes
