Wanted: Delicious, inexpensive, quick main dish recipes for families that have to be two places at one time have a healthy meal.

When I received this, I thought about: When time is short, one of my favorite go to recipes is Potato Soup. I hope that you enjoy. Take care…and…I’ll be seeing you around…agnes

Plain Potato Soup

5 cups cubed potatoes

1 small sweet onion, finely chopped

½ cup finely chopped celery

1 tablespoon minced parsley

2 tablespoons butter

4 cups whole milk

Small package Peppered Gravy mix

In a heavy bottom Dutch oven melt the butter and stir in the onion, celery and parsley. Cook over low heat until tender. Add potatoes and cold water to cover. Bring to a boil, reduce to simmer, cover and cook until potatoes are tender. Do not drain potatoes. Mix gravy mix and 1 cup of the milk. Gently stir the remaining milk into the potatoes and stir in gravy mixture. Let cook, stirring to keep from sticking until it has a creamy thickness. Taste and adjust salt and pepper. If too thick, add a little more milk. To make it taste richer, add a couple tablespoons of plain dry coffee creamer. Serve with slab bacon and cornbread.

Creamed Beef

(Serve with rice, noodles, toast, or biscuits.)

1 pound lean ground beef

4 tablespoons flour

1 large can evaporated milk

Salt and pepper

2 tablespoons shortening

½ tablespoon Worcestershire Sauce

Brown beef (scramble like) and drain if necessary. You should have about 3 tablespoons fat for the flour. Push beef to one side and stir flour and salt and pepper into fat. Stir and cook to lightly brown. Add milk, Worcestershire sauce, and ½ milk can of water (add more water, if needed) and cook until thick.

Note: For the two following recipes you can use a pressure cooker. Prepare as directed in pressure cooker instead of Dutch oven. Secure lid and place pressure regulator on vent and cook 15 minutes after it reaches the pressure. Turn off heat and let it cool on its’ own. Serve over rice or mashed potatoes.

Swiss Steak

1 round steak cubed to tenderize and floured

1 can of tomatoes, crushed

1 small bell pepper, chopped

1 package onion soup mix

1 tablespoon flour

2 tablespoons oil

Heat oil and 1uickly brown floured steak. Remove steak and sauté bell pepper. Return browned steak to pan and add tomatoes. Mix flour and onion soup mix and stir into pan. Cover and cook at 350 degrees for 45 minutes. Remove cover and cook gently on top of stove until it thickens. Serve over cooked rice.

Creamed Chicken

2 pounds de-boned chicken thighs

2 tablespoons butter

¼ cup minced onion

¼ cup minced celery

2 tablespoons flour

1 large can evaporated milk

1 can sliced mushrooms

Salt and pepper to taste

Melt butter in Dutch oven. Sprinkle chicken with salt and pepper. Place in Dutch oven and lightly brown on all sides. Remove to a platter. Add onions and celery to the Dutch oven and cook until just about tender. Stir in flour, milk, and liquid from mushrooms. Heat to a simmer and add the chicken and mushrooms. Heat to simmer, cover and cook until chicken is done and gravy is thick. About 20 minutes. Serve with mashed potatoes.

Somethings I came across that will give you something to laugh about:

•The reason Mayberry was so peaceful and quiet is because nobody was married.  Andy, Aunt Bea, Barney, Floyd, Howard, Goober, Gomer, Sam, Earnest T. Bass, Helen, Thelma Lou, Clara, and of course, Opie – all single.  The only married person was Otis, and he stayed drunk.

•I can’t understand why women are okay that J C Penny has an older women’s clothing line named, “Sag Harbor”.

•The pharmacist always asked me my birth date.   I was so sure she was going to get me something. My birthday just passed and she forgot.

•Going to church doesn’t make you a Christian any more than standing in a garage makes you a car.
