Hope all of you are sliding into a happy New Year and things will be better for you. My friends at Christ Lutheran Church on Langston Road blessed us with a cook book last year. I have enjoyed reading it and preparing some of the recipes. I thought I would share again with you all. Take care and remember… I’ll be seeing you around…Agnes

From: At Thee Lord’s Table cookbook (208 Langston Road; Perry, Ga.)

Vidalia Onion Dip by Marva Eckman

2 cups chopped sweet Vidalia onions

1 cup mayonnaise

1 cup shredded 3 cheese combo

Mix all together and microwave until hot and bubbly (about 5 minutes).

Sausage Soup by LaVera Pate

1 pound hot sausage meat, cooked and drained

6 Medium Golden Yukon Potatoes cubed and cooked in lightly salted water.

1 pit (2 cups) chicken broth: Recommend draining water from potatoes and adding enough water to make 2 cups and adding chicken bouillon to make broth.

1 large can Cream Style Corn

1 can Whole Kernel Corn

1 can Cream of Chicken Soup

1 pint (2 cups) Half and Half

Mix the first six ingredients in a soup pot and heat until hot. Stir in the half and half and heat to a simmer. Taste and adjust seasonings if necessary. Serve with cornbread and a platter of carrot and celery sticks with ranch dressing along with apple and orange wedges for a complete meal.

Pennsylvania Haluskie (Polish) by Nancy Wallick

1 large head of cabbage cut into bite size pieces.

1 large bag of medium size noodles

1 medium size onion or more, chopped

1 tablespoon of Chicken Bouillon Granules

Butter or Margarine

Salt and Pepper (Easy on the salt)

Cook cabbage in large pot of water until just tender. Meanwhile melt butter in a skillet and add onions. Sauté until tender. To a pot of boiling water, add salt and noodles and cook to your taste. Immediately drain and. Rub a roaster or crock pot with butter or margarine and add the cabbage, onions, and noodles, along with the chicken bouillon and more melted butter or margarine and toss to mix well. Serve.

Creamy Chicken Breasts by Diana Gillies

6 (about 1 ½ pounds) boneless, skinless chicken breasts

1 can (10 ½ ounce size) Condensed Cream of Chicken Soup

1/3 to ½ cup of water

Arrange chicken in a baking dish. Combine soup and water and pour over chicken. Bake in a 350 degree oven for 45 to 60 minutes or in a crockpot for 6 to 8 hours.

Shepherd Pie Jennell Regula

1 pound Ground Beef

½ cup chopped onion

½ cup chopped celery

1/3 to 1 teaspoon thyme

1 can of Condensed Cream of Mushroom Soup

3 cups mashed Potatoes

1 cup shredded Cheddar Cheese

Cook meat, onion, and celery in a skillet until meat is done, stirring to scramble the meat. Drain off pan drippings and add thyme and soup. Stir to mix well. Spoon mixture in a greased, shallow, 2 quart casserole. Spread potatoes evenly over the top of the casserole and bake at 350 degrees for 20 minutes. Remove from oven and sprinkle with the cheese. Return to oven and bake until cheese melts. (About 5 minutes).

Sawdust Pie by Kathy Cleveland

1 9 inch pie crust

1 ½ cups Graham Cracker Crumbs

1 ½ cups sugar

1 ½ cups flaked coconut

1 ½ cups chopped pecans

1cup egg whites

Cover pie shells with 2 layers of foil and bake at 450 for 8 minutes. Remove foil and bake an additional 4 to 5 minutes or until golden brown. Cool on wire rack. Combine coconut, cracker crumbs, pecans and sugar in a large bowl. In another bowl that is clean, beat the egg whites until foamy. Add to the coconut mixture and mix well. Pour into the prepared pie crust. Bake, uncovered, in a 350 degree oven until set (about 35 minutes).
