I love to read Tipper’s Blogs. These biscuits are delicious. I love them with Tuna or Chicken Salad or with a cup of Tomato soup. This is as Tipper wrote it…agnes

Shortly after I was married I told Granny I just couldn’t get my biscuits to taste like hers. Sometimes they were good sometimes they were awful! She said maybe I ought to make them like Pap’s mother, my mamaw, did. She used White Lily self-rising flour and heavy cream. I gave the simple recipe a try and I’ve been making biscuits that way ever since.

I use a two to one ratio. Two cups of self-rising flour to one cup of heavy cream. The recipe is easily increased or decreased by using the ratio. To make cheese biscuits I simply add in a good handful of cheddar cheese and sprinkle garlic powder to taste.

Instead of rolling out the dough and cutting out biscuits, I drop spoonfuls of batter onto an ungreased baking sheet and bake at 450 until gold brown.

Most cheese biscuit recipes call for brushing the tops of the biscuits with melted butter once they’re remove from the oven. I never brush with butter and the cheese biscuits are still might tasty…Tipper

Here are a few requests:

Ground Beef Stroganoff

Brown 1 and ½ pounds of lean ground beef with ½ cup minced onion and ¼ cup minced celery. When cooked stir in 2 tablespoons beef bouillon glandules and 6 tablespoons of flour. Stir to mix well and stir in 2 cups milk and one large can of mushrooms (liquid and all). (You can use chopped or sliced.) Cook over low heat, stirring often, until thick. Just before serving, stir in one 8 ounce cartoon of sour cream. Serve hot over rice or noodles.

Bean Salad

1 can green beans, drained

1 can yellow wax beans, drained

1 can red kidney beans, rinsed and drained

1can whole kernel corn, drained

½ cup small chopped celery

½ cup small chopped onion

Dressing:

In a pint jar with a tight fitting lid, put:

1/3 cup sugar

1/3 cup salad or olive oil

1/3 cup good vinegar (plain or apple cider)

½ tablespoon dried parsley

Salt and Pepper to taste

Pinch of red pepper (if desired). Screw on lid and shake until sugar is dissolved. Pour over beans and toss to make sure all is coated with dressing. Refrigerate until about 15 minutes before serving. Toss and serve…using a slotted serving spoon. This can also be served on a wedge of iceberg lettuce.

Sweet Potato Pie

3 medium size sweet potatoes, baked

3 tablespoons soft butter

1 can sweeten condensed milk

3 eggs

2 teaspoons of good vanilla

When potatoes are just cool enough to peel, do so and up in mixing. Beat to cream. Beat in butter and vanilla. Beat in sweeten condensed milk and eggs, one at the time. Pour into an unbaked pie shell. Bake in a 375 degree, preheated oven until custard is set. Serve warm or cool with whip cream. (From my kitchen…Agnes)

I love to read the history of Gospel Songs. Recently about some of my favorites, I discovered the story of William M. Golden, gospel song writer. He was born in Webster County, Mississippi. It is recorded that many of his songs that appear in our Hymnals were written while he was serving a term in prison. Some of the Gospel songs he wrote are: “Where the Soul of Man Never Dies,” “A Beautiful Life,” “There’s Glory for you,” and “I’ll Sing Along…” Some people to have a good heart and do change…Agnes
