Good morning…today I am going to share requests from last year. Thanks for the recipe and information requests. I enjoy doing the work. Take care and I’ll be seeing you around…Agnes

Wilted Salad:

Wash your lettuce and spread out on a couple of kitchen towels or several layers of paper towels and gently press with towels to remove as much water as possible. Tear up or coarsely chop lettuce. Slice several green onions and toss with lettuce. Cook chopped salt cured pork aka ‘streak of lean’ over medium heat until meat is done. Remove meat from skillet, pour fat from skillet, reserving 2 tablespoons fat in skillet and keeping it hot. Remove from heat source. Quickly add lettuce and onions…along with 1 tablespoon of cider vinegar and black pepper. Quickly stir to mix, sprinkle cooked salt pork on top, and serve immediately. If your taste desires, add more vinegar, fat, salt and pepper

Plain Cream Sauce

Type Milk Flour Fat

Thin 1 cup 1 tablespoon 1 tablespoon

Medium 1 cup 2 tablespoons 2 tablespoons

Thick 1 cup 3 tablespoons 3 tablesppons

Melt fat (I normally use butter or oil.) in a small heavy saucepan and whisk in flour. Stir or whisk in milk and cook over low heat until it is the desired thickness.

Homemade Apple Pie Filling

7 quarts apples…peeled, cored and sliced in sterile canning jars.

In a large heavy stainless steel or enamel pot cook the following over medium heat until sugar is dissolved:

9 cups water

5 cups sugar

1 cup cornstarch

3 teaspoon ground cinnamon

1 cup lemon juice

Pour over apples, leaving the correct headspace, but making sure apples are covered. Whip mouth of jar, seal, and process until canner reaches 10 pounds of pressure. Remove from heat and allow to cool before removing lid.

Cinnamon Apple Jelly

1 quart apple juice

1 box Sure-Jel

4 and ½ cups sugar

2 tablespoons red hots cinnamon candy

Mix all and cook on medium boil for 3 minutes. Put in sterile jars and seal.

Strawberry Fig Preserves

3 cups soft mashed figs

2 cups sugar

6 ounces strawberry Jell-O Mix all together and cook over medium-low for 30 – 45 minutes, put in jars and seal.

Jalapeno Pepper Jelly: Makes 8 to 10 pints

3 large green bell peppers, seeded and chopped

6 to 7 large, fresh jalapenos, seeded chopped

1/3 cup water

5 cups sugar

3 cups cider vinegar

3 (3 ounce) packages Certo

About 10 drops of green food coloring

Process peppers and water in the food processor. In a large tall saucepan combine peppers, sugar and vinegar. Bring to a boil and boil for 4 minutes, making sure that sugar is dissolved. Watch and stir because mixture will easily boil over. Remove from heat and stir in Certo and food coloring. Pour into hot jelly jars, leaving ¼ inch headspace. Whip tops, seal and process in a boiling water bath for 5 minutes.

Pear Honey

(Very good with fresh pork or with sausage at breakfast…Agnes)

3 quarts ground pears (I use food mill or processor…agnes)

3 quarts sugar

2 large cans crushed pineapple (do not drain)

Juice of 1 lemon

2 tablespoons of white cider vinegar

Mix all ingredients, cover and set aside for about 30 minutes to 1 hour. Cook over medium heat, stirring frequently, to the desired thickness. Put in hot sterile jars, clean mouth of jar, seal and process in a water bath for 10 minutes. Makes about 12 pints.

Recipe for Laughter:

Placide went to the doctor, who told him that he had a bad illness and only a year to live. Placide decided to talk to his pastor, Father Boudreaux. After Placide explained his situation, he asked his Father Boudreaux if there was anything he could do.

“What you should do is go out and buy a late 70’s or early 80’s model Dodge pickup,” said the pastor. “Then get married to the meanest woman you can find, and buy yourselves an old trailer house in the panhandle of Oklahoma.”

Placide asked, “Will this help me live longer?”

“No,” said the pastor, “but it will make what time you do have seem like forever.”
