Quick and easy Mexican food
Recently, I have had several requests for good, quick Mexican food. Some recipes I had on hand and others I found on the internet and from friends. I hope that you enjoy…I’ll share more latter. Take care and I’ll be seeing you around…Agnes
Taco salad (from a family member)
16 ounces lean ground beef
1 (1.25 ounce) package taco seasoning mix
1 head iceberg lettuce, shredded
1 red onion, sliced
1 bunch green onions, chopped
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can kidney beans, drained
2 large tomatoes, chopped
1 avocados – peeled, pitted and cubed
8 ounces shredded cheddar cheese
1 (16 ounce) package corn chips
1 (16 ounce) bottle Catalina salad dressing
Directions: Prepare the ground beef as directed by taco seasoning package and set aside. In a large bowl, combine the beef mixture, lettuce, red onion, green onion, pinto beans, kidney beans, tomatoes, avocado and cheese. Mix well. Before serving, add the corn chips and enough dressing to coat. Mix well and serve immediately.
Mexican Pizzas (This is one of my favorites…Agnes)
1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
1/2 avocado, diced
1 tablespoon black olives, sliced
Directions: Heat the refried beans. In a large skillet, brown the ground beef. Stir in the seasoning packet. Preheat oven to 350 degrees F. Place a small amount of vege-table oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet. Spread a thin layer of beans on the tortillas, followed by a layer of beef and cheese. Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado and olives (Allrecipes).
Taco Seasoning (Delicious)
1 1/2 tablespoons corn flour
4 1/2 teaspoons chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/2 teaspoon paprika
1/4 teaspoon cumin
1/2 teaspoon garlic salt
1/4 teaspoon sugar
1 teaspoon dried minced onion
1/2 teaspoon beef bouillon granules
1/4 teaspoon ground red pepper
1 1/3 pounds lean ground chuck
1 cup water
Directions: In a medium bowl, combine the corn flour, chili powder, onion powder, garlic powder and seasoned salt. Stir in the paprika, cumin, garlic salt and sugar. Blend in the onion, bouillon and ground red pepper, stirring until all spices are well blended. Crumble the ground chuck into a large skillet over medium heat. Cook, stirring, until browned. Remove from heat, rinse meat with hot water and drain water and grease from beef. Return meat to skillet and stir in seasonings and water. Reduce heat to medium-low and simmer until most of the liquid has cooked away about 20 minutes (Allrecipes).
