What you can cook with Coca-Cola

It has been a wonderful week. I took a trip to Atlanta to visit grandchildren and a great grandchild. I had a wonderful time. They carried me to The World of Coca-Cola. I am now in possession of the cookbook ‘Classic Cooking with Coca-Cola’ by Elizabeth Candler Graham, the great-great-granddaughter of Asa Griggs Candler, founder of Coca-Cola and Ralph Roberts. I want to share some recipes from the book. Hope you find something you like and that you enjoy as much as I enjoy sharing these recipes with you. I’ll be seeing you around … Agnes

These recipes are as written in ‘Classic Cooking with Coca-Cola’ cookbook.

Quick Barbecue Sauce

½ cup ketchup

1 cup Coca-Cola

Simply mix together and pour on meat as it cooks.

Chicken Wings over Atlanta

3 pounds wings

1 cup soy sauce

¾ cup brown sugar

½ cup butter

1 teaspoon dry mustard

¾ cup Sprite

Place the chicken in a shallow baking dish. In a saucepan, combine the remaining ingredients and cook until hot. Cool the sauce and pour it over the chicken. Marinate for 2 hours, turning occasionally. Leave the chicken in the sauce and put in a 350 degree oven; bake for 45 minutes, turning once. Spoon the sauce over the chicken while baking. Remove chicken from sauce and broil it on both sides until browned.

Skillet Chicken

3 pound frying chicken

Salt and pepper to taste

Paprika to taste

1 can mushrooms (4 oz.)

¼ cup Coca-Cola

1 can (8 oz) tomato sauce

¼ teaspoon thyme

3 green peppers cut in strips

1 medium onion, sliced

Cut chicken into serving pieces and sprinkle with salt, pepper, and paprika. Drain mushrooms, reserving liquid. In a skillet, brown the chicken in a small amount of fat and remove chicken from pan. Stir in the Coca-Cola, tomato sauce, mushroom liquid, and thyme. Stir until well blended. Add green peppers, onions, chicken, and mushrooms. Cover and simmer for 25 minutes.

Coca-Cola Roast

1 beef roast (bottom round, chuck, or other less tender cut works well.)

1 package dry onion soup mix

12 ounces Coca-Cola

Place the unseasoned roast in a baking dish. Sprinkle with the onion soup mix over the roast. Pour in the Coca-Cola, cover and seal tightly with aluminum foil, place in oven and cook at 300 degrees until tender. Time will vary with size of roast. (A 4 pound roast will take 3 ½ to 4 hours.)

Forgotten Stew

(When I was in grade school in South Georgia, we were served this dish for lunch. Because someone saw the ‘lunch lady’ pouring Coca-Cola in it, we called it Coca-Cola Stew.)

1 pound lean stew meat

2 potatoes, quartered

2 carrots, sliced

½ cup celery, chopped

1 tablespoon tapioca

½ cup Coca-Cola

8 ounces tomato sauce

Put stew meat, potatoes, carrots, onion, and celery in a casserole dish. Sprinkle with tapioca. Combine tomato sauce and Coca-Cola and pour over the top. Cover tightly. Put in 250 degree oven and do not peek for 4 hours.

Pot O’ Pintos

2 cups dry pinto beans

1 small piece salt pork

5 dried chili peppers

1 small onion, chopped

5 cups water

6 ounces Coca-Cola

½ tablespoon salt

Mix beans, water, onions, and salt pork in a crock pot or bean pot and cook overnight. Add Coca-Cola, chili peppers, and salt and cook for several hours more.

Coca-Cola Fluff

1 package lime gelatin

12 ounces Coca-Cola

2/3 cup boiling water

1 cup heavy cream, whipped

Pour the boiling water over the gelatin and stir until gelatin is dissolved. Let cool slightly. Add the Coca-Cola and mix thoroughly. Cool and refrigerate. When the gelatin begins to congeal, beat with a mixer until frothy. Fold in the whipped cream and chill.

Ralph Robert’s Bonus Recipe

(I remember doing this. We thought it was great.)

As a little boy, growing up in the South in the 1950s, one of our special treats was to take a cold Coca-Cola and pour a bag of salted peanuts inside. The taste sensation of simultaneously drinking Coke and eating the peanuts is indescribably delicious. I tried it again just today. It’s as great as I remembered.
